Pork Chops and Cream Gravy

The Chops
4 pork chops (1/2 inch)
1 cup all purpose flour
1-teaspoon crumbled dry thyme
½ teaspoon Kosher salt
½ teaspoon black pepper
2 tablespoons lard or vegetable oil

The Gravy
2 tablespoons all purpose flour
2 cups whole milk or half and half
Salt and pepper to taste

Directions
Mix flour, crumbled thyme, salt and pepper.
Dredge each pork chop in the flour and herb mixture
Heat lard or oil in a heavy skillet to medium high heat
Fry chops two at a time until golden brown on both sides
Drain chops on a paper towel
Once chops are cooked, brown 2 tablespoons of flour in the hot oil Add milk or cream and stir vigorously until thickened
Season with salt an pepper
Serve over rice or mashed potatoes
