Herb Chicken

Ingredients
4 large chicken thighs (bone in) 4 drumsticks
¼ cup butter softened
1 tablespoon paprika
1 tablespoon fresh thyme leaves minced
1 can beef consommé
1 teaspoon Kosher salt
½ teaspoon pepper
4 large carrots, sliced
2 slices bacon, diced

Directions
Preheat the oven to 400°F.
Sauté diced bacon in a large heavy ovenproof pan until it is golden brown. Remove bacon from the pan and reserve.
Slice the carrots and mince the thyme while bacon is browning.
Dry chicken pieces thoroughly and brown on all sides in bacon fat at medium high temperature. Remove the pan from the heat.
Surround the chicken with the carrot slices and the crisp bacon.
Blend the butter, paprika, thyme, salt and pepper together. Spread the mixture on top of the chicken.
Pour the beef consommé over all.
Bake the dish at 400°F for 1 hour. Garnish with more fresh thyme. Serve with rice.
